Pumpkin Chocolate Chip Bars
Are you looking for a fall dessert to use that can of pumpkin? These bars taste like fall and are especially delicious when you eat them warm so the chocolate chips are melty.

3/4 cup brown sugar
3/4 cup white sugar
3/4 cup butter softened
1 egg
1 can pumpkin purée
2 tsp vanilla extract
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
2 1/2 cups flour
2 cups semi-sweet chocolate chips
1. Preheat oven to 350 degrees and grease a 13x9 baking dish like this one.
2. Combine flour, baking powder, baking soda, and cinnamon in a medium sized bowl. Whisk together and set aside.
3. Cream together brown sugar, white sugar, and butter in a large bowl with electric mixer (I use this Kitchen Aid stand mixer)
4. Add egg and beat on medium speed until your mixture is fluffy
5. Add the can of pumpkin purée and the vanilla. Beat on medium speed until everything is well mixed together. You may need to scrape down the sides of the bowl a couple of times.
6. Slowly add the flour mixture from step 2, I added about 2/3 of a cup at a time, on a lower speed until combined.
7. Mix in the chocolate chips
8. Spread batter into your greased 13 x 9 dish. You can also line the dish with parchment paper to make it easy to remove. I use this parchment paper every day!
9. Bake at 350 degrees for 45 minutes.
10. Remove from oven and allow to cool in the pan before removing.
